A spinning top. A slow-turning spit. Both are a trompo — and ours wears the crown.
In a taquería, the trompo is the vertical spit that al pastor is carved from — and in Spanish, it also means a spinning top. At Brunch, taquiza & tequila, layers of marinated pork turn, roast, and caramelize before being carved onto a warm tortilla.
